TRADITIONAL ROASTING OVER OLIVE WOOD FIRE
In Sicily, at the foot of the volcano Etna, centuries ago people used the cut wood of olive trees to roast their caffè over an open fire. The slopes of Mount Etna in particular are rich in olive groves, which grow particularly well on the fertile lava soil.
The lava soil enriches the wood with minerals that release spicy aromas when flamed. Our long-term roasting process follows this tradition, lovingly optimized especially for TRE FORZE! We roast beans manually in small drums at low temperature over olive wood fire, slowly - for about 30 minutes.
Time played an important role in this innovation, not in the sense of speed and haste, but on the contrary: we took the time needed to develop the best Espresso Caffè and to work constantly on the best result. Just as the roasting process itself needs time to develop the full aroma of the bean.
INNOVATION PRESERVES TRADITION
The roasting machines used to produce TRE FORZE! are highly complex. They consist of a perforated tube, an elaborate ventilation and heating system, and the firing point underneath. They roast our espresso coffee particularly gently, in small batches (by the sack, bags of 60 kilograms each) over an open fire using wood from Sicilian olive trees. This wood is stored dry for at least twelve months and comes from the olive groves around the volcano Etna. The wood is sawn for maintenance reasons: no tree is felled for TRE FORZE!
TRE FORZE! consists of a secret blend of different bean types, each requiring specific roasting times. Each type of bean gets exactly the roasting time it requires. The beans are not shocked. Roasting begins at around 30 to 50 degrees Celsius - then the temperature is gradually increased to a maximum of 230 degrees and then lowered again to 150 to 100 degrees.
During this gentle prelude, the coffee cherries release their valuable aromas and essential oils. Just as gently, the beans are cooled down again after roasting and then rest in silos. There, degassing takes place during the first three to five days of rest. Each type of bean rests separately. Only then are the beans blended in our special, secret ratio - as in the world of wine for a cuvée! - and packaged. During our slow roasting at lower temperatures, more incompatible tannins and bitter substances are transformed into compatible ones. OUR BLEND OF BEANS: FROM THE BEST HIGHLAND LOCATIONS
Our coffee farmers are traditional family farmers from the best growing areas in Peru, Costa Rica, Togo, Cameroon and Brazil. They produce for us the highest quality beans available on the market. They pick the ripe coffee cherries by hand, dry them in the sun for several weeks, clean them carefully and sift them - not twice as usual, but five times. Only the best beans are selected in the final selection process and then filled into coffee sacks and shipped across the sea to Sicily in special dry refrigerated ships.
A small proportion of high-quality Robusta beans refines first-class Arabica beans. Before roasting, the raw beans used for TRE FORZE! smell like a composition of fresh herbs and green peas. The roasted beans exude a blend of delicately spicy aromas reminiscent of the smell of dried dates, fine dark chocolate and fresh macadamia nuts. After preparation, TRE FORZE!
